Tehran (IP) - Iranian Almond Stew (Pichaq Ghimeh) is one of the delicious and local dishes of Ardabil, which is very popular for tourists who pay a visit there.

Ingredients:
Beef: 500 g, sliced almonds: 200 g, Medium onion: 2, lemon juice: 50 ml, thick brewed saffron: 3 tablespoons, tomato paste: 1 tablespoon, egg yolk: 4, cinnamon: 1 tablespoon jam, salt, pepper, and turmeric, butter: 100 Hot,
bay leaf: 3

How to cook:

Soak sliced ​​almonds in water for 2 hours and then drain it and fry it with 25 grams of butter.
In a saucepan, fry the onions with a little butter until golden, then add the meat and bay leaves to the onions and fry, then add the tomato paste to the meat and fry a little, add some water to the ingredients until it boils.

Turn down the heat and let the meat cook for about 2 hours and then add some saffron, sliced ​​almonds, and cinnamon to the meat and turmeric, salt, pepper, and bay leaf to the meat.

 Then add lime juice to the meat and let the meat simmer again for about 45 minutes till its water drains.

Transfer the stew to a large pan and crack the eggs between the meat without stirring them, sprinkle a little saffron on the yolks and let it cook over gentle heat.
If you wish, garnish the stew with fried onion and serve with rice.
