Iran PressIran News: Yatimak is one of the common dishes of Bushehr province, which is cooked without meat; but is rich in nutrients due to the beans it contains.

It has a very high nutritional value and is always one of the main dishes on the table of the people of the Iranian south-western Province of Bushehr.

This dish is suitable for people who love spicy food. In fact, the main features of Yatimak are its hot nature and the tamarind used in it.

Ingredients:

Eggplant: 6 pcs

Tomatoes: 6 pcs

Onions: 3 pcs

Garlic: 3 cloves

cowpea: 1 cup

Tamarind water: half of a glass

Oil: as much as necessary

Turmeric: 1/2 teaspoon

Salt: 1 teaspoon (flat head)

Remember that Bushehri Yatimek is different from yatimche food that is cooked in some other cities and they are not the same.

How to cook:

First cook cowpea as much as possible, then peel the eggplants and put them in salt water. Drain and dry them after 30 minutes to prepare them for frying. The next step is to chop and fry the onion and garlic. Finally, mix all the ingredients along with the turmeric, and let them cook for 20 to 30 minutes on low heat.

It can be served either with fresh bread or rice.
