Iran Press/Iran News: The farmers in Gilan province, where 90 percent of Iranian tea is produced harvest green tea leaves in three stages of spring, summer, and autumn.
The difference between spring tea and the tea harvested in summer and autumn is that the spring has a bitter and more acrid taste than the others.
There are 55,000 tea-farmer families living in Gilan and Mazandaran provinces in northern Iran, working on 25,000 hectares of farms from which 115,000 tons of green leaves are harvested, of which 45,000 tons are harvested in spring.
